Can I use white acrylic paint as a masking fluid in a painting?
I just started painting with watercolors. I have trouble doing a smooth wash background around complex shapes and I don't want to shell out $12 for a bottle of masking fluid. If I used white/transparent acrylic paint as a masking fluid, would it peel off easily and cleanly so I could finish painting underneath?

No. Acrylic paint is just that: paint. You would end up just with an opaque white painted on.
Try experimenting with rubber cement as a masking fluid. I used to use that (since you could buy it by the gallon) on large canvases painted in acrylic. I used it with some watercolors, too. I didn't care for masking fluid, myself, also because I sometimes had difficulty removing it. Experiment first on some "scrap" pieces: whether it "works" or not, and peels off cleanly without pulling off some of the color underneath, may depend on the paper and paints you're using. I don't remember having any problems with heavy papers and my watercolors. And you can use a rubber cement eraser, as well as your fingers, to pull it off when you're through. I did a number of layered abstract watercolors and acrylics, using the rubber cement to create "negative" areas in each layer.
Another masker for watercolors (but is permanent) is wax, even crayons.
